Southern Vietnam – a very fertile land on Me Kong Delta, featured with various attractive landscapes, diverse culture and friendly people. Cuisine culture in here is also one of can-not-miss things with a lot of great food, especially simple traditional grilled foods. Here are some famous grilled dished in the South that you should try.

1.    Ca loc nuong trui (Grilled sneakhead fish)

Ca Loc Nuong Trui has been idyllic and traditional food of Southern farmers for a long time. After a hard working day in rice field, these farmers catch some sneakheads right on the field and grill them by hay and then eat them on their immense and fresh fields.

It quickly becomes a famous speciality and famous with tourists because of its great taste and beautiful tradition.
The best headsnake to make this food is the ones from nature. The way to make it is very easy but also requiring a skillful hand. The grilled fishes are put on banana leaves, removed the black burning layer outside to expose the interesting part inside. The food is eaten with various fresh herbals and vegetables as well as tamarind fish sauce.

2.    Ran Bong Sung Nuong Moi (Grilled rainbow water snake)

Rainbow water snake is a special colubrid snake found in freshwater lake, pond or wetland. It is another creation of Southern farmers. This food may become a challenge with many international tourists, but according to local people, it is very nutritious and very good taste.

The snake is caught alive, make it clean and grill directly on charcoal. When a very good smell fills the air and the snake’s skin is peeled off, it means the food is ready to enjoy. The grilled rainbow water snake is served with Vietnamese coriander and lizard tail and dipped in chili salt.

3.    Ga nuong dat set (grilled clay-wrapped-chicken)

This is a sophisticated dish that Southerners make in special occasions or to receive their honored guests.

The chicken is kept their feather, but removed all the organs by a special method. Then, it is wrapped with clay and grilled on burning hay. With this way, the chicken can be remains every nutrition as well as flavor. The chicken is grilled until the clay layer become dry and crack off, bring the feather and skin away.

This tasty chicken is used with chili salt and some fresh herbals.

4.    Oc Dong nuong (Grilled snail)

Different species of snail caught in wet fields or freshwater lake in the South are very tasteful and nutritious. Putting these snails on the grill, you can sit around the charcoal stove and wait until the snails open their mouth. Then you use a toothpick to take the inside part and dip it in fish sauce made up with lemongrass and pepper and lemon water.
